Flourless Lemon Greek Yogurt Pie is light, creamy, and bursting with zesty lemon flavor
Ingredients
For the Crust
🌰 1 ½ cups (150g) almond flour
🍯 2 tbsp (30g) maple syrup or honey
🧈 2 tbsp (30g) melted coconut oil or butter
🧂 ¼ tsp salt
For the Filling
🥣 1 ½ cups (360g) plain Greek yogurt
🍯 ¼ cup (60ml) maple syrup or honey
🥚 2 large eggs
🍋 1 tbsp lemon zest
🍋 ⅓ cup (80ml) lemon juice (freshly squeezed)
🧂 ½ tsp vanilla extract
🧂 ¼ tsp salt
Instructions
1️⃣ Preheat Oven: Preheat oven to 350°F (175°C). Grease or line a 9-inch pie dish with parchment paper.
2️⃣ Make the Crust: In a bowl, combine almond flour, maple syrup, melted coconut oil, and salt. Mix until the dough comes together. Press the mixture evenly into the bottom of the pie dish. Bake for 8-10 minutes, or until lightly golden. Let cool while you prepare the filling.
3️⃣ Prepare the Filling: In a large bowl, whisk together Greek yogurt, maple syrup, eggs, lemon zest, lemon juice, vanilla extract, and salt until smooth.
4️⃣ Assemble & Bake: Pour the filling into the cooled crust. Bake for 25–30 minutes, or until the center is set and slightly golden around the edges. The filling should be firm but slightly wobbly in the center.
5️⃣ Cool & Serve: Allow the pie to cool to room temperature, then refrigerate for at least 2 hours before serving to fully set.
