Walnut & Date Greek Yogurt Coffee Cake
For the Cake:
🥣 1 cup whole wheat flour (or all-purpose flour)
🌾 1/2 cup almond flour
🧂 1 tsp baking powder
🧂 1/2 tsp baking soda
🌿 1/2 tsp cinnamon
🧂 1/4 tsp salt
🥚 2 large eggs
🍶 1 cup plain Greek yogurt
🍯 1/3 cup honey or maple syrup
🫒 1/4 cup olive oil (or melted coconut oil)
🌰 1 tsp vanilla extract
🌴 1/2 cup chopped dates (pitted)
🌰 1/3 cup chopped walnuts
For the Walnut Streusel:
🌰 1/4 cup chopped walnuts
🌿 1 tbsp coconut sugar or brown sugar
🌿 1/2 tsp cinnamon
🧈 1 tbsp softened butter (or coconut oil)
Instructions
1️⃣ Preheat Oven to 350°F (175°C). Grease or line an 8-inch square or round baking pan.
2️⃣ Make the Streusel: In a small bowl, mix walnuts, coconut sugar, cinnamon, and butter until crumbly. Set aside.
3️⃣ Mix Dry Ingredients: In a large bowl, whisk together flours, baking powder, baking soda, cinnamon, and salt.
4️⃣ Mix Wet Ingredients: In another bowl, whisk together eggs, Greek yogurt, honey/maple, olive oil, and vanilla until smooth.
5️⃣ Combine: Add wet to dry ingredients and mix until just combined. Gently fold in chopped dates and walnuts.
6️⃣ Assemble: Pour batter into the pan and smooth the top. Sprinkle with the walnut streusel.
7️⃣ Bake: Bake for 28–35 minutes, or until a toothpick inserted in the center comes out clean. Cool before slicing.
