🍯 ¼ cup (60ml) honey or maple syrup
🥚 2 large eggs
🌰 1 cup (90g) rolled oats
🧂 1 tsp baking powder
🧂 ¼ tsp baking soda
🧂 ¼ tsp salt
🍋 Zest of 1 lemon
🍋 1 tbsp lemon juice
🫐 ½ cup (75g) fresh blackberries, chopped if large
🌿 1 tsp vanilla extract
🌾 Optional: ¼ cup chopped almonds or walnuts for added texture
Instructions
1️⃣ Preheat Oven: Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.
2️⃣ Mix Wet Ingredients: In a large bowl, whisk together Greek yogurt, honey, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
3️⃣ Add Dry Ingredients: Stir in oats, baking powder, baking soda, and salt until fully combined.
4️⃣ Fold in Blackberries: Gently fold in the blackberries and optional nuts.
5️⃣ Fill Muffin Cups: Divide the batter evenly between the muffin cups, filling them about ¾ of the way full.
6️⃣ Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
7️⃣ Cool & Serve: Let the muffins cool in the pan for 5 minutes before transferring to a wire rack. Enjoy fresh or store in an airtight container for later!
