🌾 1 ½ cups (135g) oat flour (or ground rolled oats)
🧂 1 tsp baking powder
🧂 ½ tsp baking soda
🧂 ¼ tsp salt
🍋 ½ tsp lemon zest (optional, for brightness)
Instructions
1️⃣ Preheat Oven: Preheat your oven to 350°F (175°C) and line or lightly grease a muffin tin.
2️⃣ Mix Wet Ingredients: In a large bowl, whisk together eggs, Greek yogurt, milk, maple syrup, vanilla, and lemon zest if using.
3️⃣ Add Dry Ingredients: Stir in oat flour, baking powder, baking soda, and salt until just combined.
4️⃣ Fold in Strawberries: Gently fold in the chopped strawberries.
5️⃣ Fill Muffin Tin: Divide batter evenly between 8–10 muffin cups.
6️⃣ Bake: Bake for 20–25 minutes, or until tops are golden and a toothpick comes out clean.
