Cranberry Orange Greek Yogurt Cookie
Ingredients
🍊 1 tbsp orange zest
🍯 ¼ cup (60ml) maple syrup or honey
🥣 ½ cup (120g) plain Greek yogurt
🥚 1 large egg
🌿 1 tsp vanilla extract
🌾 1 ½ cups (150g) almond flour
🧂 ½ tsp baking soda
🧂 ¼ tsp salt
🍒 ½ cup (60g) dried cranberries (or fresh if in season)
🍊 ¼ cup (40g) orange juice (optional, for added citrus flavor)
Instructions
1️⃣ Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2️⃣ Mix Wet Ingredients: In a medium bowl, whisk together Greek yogurt, maple syrup, egg, orange zest, and vanilla extract until smooth.
3️⃣ Add Dry Ingredients: Stir in almond flour, baking soda, and salt until combined.
4️⃣ Fold in Cranberries: Gently fold in the dried cranberries and orange juice, if using.
5️⃣ Scoop & Bake: Scoop about 1½ tablespoons of dough onto the prepared baking sheet and flatten slightly. Bake for 10–12 minutes, or until edges are golden.
6️⃣ Cool & Serve: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.
