1 teaspoon baking powder
1 cup (240 ml) milk of your choice
1 large carrot, peeled and grated
1 apple, peeled, cored, and chopped
2 large eggs
2 tablespoons vegetable oil
4 tablespoons sweetener or sugar
Zest of 1 lemon
1 teaspoon ground cinnamon (optional)
1/2 cup (50 g) chopped nuts (e.g., walnuts or almonds)
1/2 cup (80 g) raisins or dried cranberries
Pinch of salt
Instructions:
- Preheat Oven: Set your oven to 180°C (350°F).
- Grease and line a baking pan with parchment paper.
- Prepare Oats: In a blender or food processor, pulse the rolled oats until they reach a flour-like consistency.
- Mix Dry Ingredients: In a large bowl, combine the oat flour, baking powder, salt, and ground cinnamon (if using).
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, sweetener or sugar, vegetable oil, milk, lemon zest, grated carrot, and chopped apple.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped nuts and raisins or dried cranberries.
- Bake: Pour the batter into the prepared pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
