Ingredients
2 medium apples, peeled and finely chopped
3 large eggs
⅓ cup (80ml) maple syrup or honey
1 tsp vanilla extract
1 tbsp lemon juice
2 cups (200g) almond flour
1 tsp cinnamon. ½ tsp baking soda, ¼ tsp salt
Optional Toppings
Thin apple slices arranged on top before baking
Sliced almonds
Light drizzle of honey or dusting of powdered sugar
Instructions
Preheat oven to 350°F (175°C). Line an 8-inch (20 cm) round cake pan with parchment paper or grease lightly.
In a large bowl, whisk together eggs, maple syrup, vanilla, and lemon juice.
Add almond flour, cinnamon, baking soda, and salt. Mix until a thick batter forms.
Fold in the chopped apples.
Pour batter into the prepared pan and spread evenly. Top with apple slices or almonds if using.
Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Let cool before slicing. Enjoy warm or at room temperature!
